A herb garden staple, the Bay Tree Bush has been gracing our kitchen gardens for years. Evergreen shrubs with aromatic leaves that bring a mouthwatering depth and rich aroma to everything from soups, stews, and curries to Bolognese and roasted or barbecued meats.

Bays are often grown in pots and respond well when trained into topiary shapes. Lush, glossy, and dense foliage makes them ideal for hedging or structural features of a formal garden. They require little more than a light trim in early spring and summer to maintain a desired shape and will happily grow in sun or partial shade in well-drained soil. They’re also well suited to coastal locations.

For ease, pluck leaves fresh from the bush and add them whole to a pot, before leaving them to infuse the cooking. Fresh leaves boast a lighter, more floral flavour than dried leaves and can be kept in the fridge. If dried, they have a more intense flavour. They should be removed before serving unless they're ground or chopped.

Top Tips

  • Fresh leaves will keep for up to two weeks in the fridge.
  • Dried leaves will retain their flavour for 6 months in a sealed container.

Care Information

  • Bay trees will grow in any well-drained soil in a sunny position, and thrive in containers, as long as they are kept well-watered.
  • Use a soil-based compost with extra grit added to improve stability of the post and help drainage as bay roots dislike sitting in wet.
  • Add controlled-release fertiliser granules to the pot or use a liquid feed every two weeks from mid-spring to late summer.
  • Check plants and repot every two years in spring so that the soil does not become exhausted and stale.
  • Bay can withstand temperatures down to at least -5°C, but frost and extremely cold winter winds can damage the foliage, so protect plants with fleece if temperatures are likely to fall below this. Similarly, pots can be wrapped in bubble wrap to protect them.
  • Any damage caused by winter cold can be pruned out in the spring.
  • Trim lighty in early spring and late summer to maintain you desired shape.
